Authentic Chicken Teriyaki

  • 1 piece deboned chicken thigh
  • Leeks
  • Ginger
  • 3 tbsp cooking oil
  • 3 & 1/2 tbsp mirin
  • 2 & 1/2 tsp Kikkoman or any Japanese soy sauce
  • 1 tsp white sugar
  • 1tsp dashi or aji no moto

How to Cook Authentic Chicken Teriyaki:

    1. Cut some slits on both sides of the chicken.
    2. Preheat oil. Then fry the chicken on low to medium fire (starting on the skin side of the chicken).

    3. Lower the flame. Remove excess oil by wiping with kitchen paper.
    4. Add in all the remaining ingredients. Stir and let it simmer.
    5. Turn the chicken and let it cook until the sauce thickens. 
    6. Lower the fire.

    7. Baste the chicken with its own sauce until it fully absorbs all the flavors.
    8. Turn of the stove.
    9. Serve while it's hot.
